Okra In Tomato And Onion Sauce.

A simple no-fuss recipe.

Ingredients: 1 Kilo tender Okra, try to find small rather than large the large okra can be stringy when cooked.

4 large onions chopped. 

2 tin tomato chopped/fresh 500g chopped.

salt & pepper.

100ml cooking oil.

Cooking Foil.

Method.

Heat oven on 200.

Wash the okra and dry well, with a sharp knife cut the stalk carefully not to slice into the main vegetable. 

Place okra, sliced onion, chopped tomato salt and pepper in a roasting tin or any oven-proof dish with your hands mix them together.

Cover okra with hot water, add cooking oil and cover the roasting tin/ovenproof dish with cooking foil.

Place in a hot oven for 60 minutes. Remove cooking foil and place back into the oven until slightly golden.

With a spatula turn the okra carefully and place back into the oven. 

Repeat until the okra is even colour and the sauce thickens.

Serve hot or cold. This recipe feeds 4 serve with yoghurt and crusty bread.
